Chicken Enchilada Soup (Makes (11) 2-cup servings)
1/2 Cup Chopped Raw Onion
8 cups Chicken Broth 99% Fat Free
25 oz Chunk White Chicken (I used Tysons Premium)
1-1/2 cups chopped, Celery, raw
1 can Red Beans
1 can Black Beans
1 can Whole Kernel Corn
29 fluid ounce, Enchilada Sauce (I used a big can of mild and a small can of medium)
2 tbsp Chopped Green Chiles
In a large pan, saute onion and celery until soft. Add remaining ingredients and bring to a boil. Simmer for 30 min.
