Cauliflower Fried Rice?

Well, I made some cauliflower fried rice on my lunch hour. But, I didn’t eat any of it. I made it so I’d have it for dinner tonight. The veggies tasted good without the cauliflower….so I hope it tastes good with the cauliflower. In all honesty, I have never eaten cauliflower. REALLY. At least it looks pretty either way 🙂 Haha

It’s gotta be better than zucchini noodles. They weren’t horrible, but I hate that I can’t get all the water out of them.

  1. I tried cauliflower rice once and didn’t like it. I LOVE cauliflower. Steamed and roasted cauliflower is AMAZING. I’m not writing it off yet, but the recipe I had followed just didn’t work out well for me. There’s another one I saw where you essentially roast the chopped up cauliflower “rice” instead of making it on the skillet, and I want to try that one pretty badly. I imagine it’s pretty hit or miss depending on how it’s prepared. I hope you like it!

    • It was actually good. Obviously not rice, but apparently cauliflower has such a mild taste it works great. I will use smaller veggies next time, add red peppers and fresh onion instead of dried.

  2. Did you salt the Zucchini before you cooked it? If you lightly salt it after you cut it up a bit and let it “rest” for 10 minutes you can pat the water off with a paper towel.
